Gol Gappay / Pani Puri
Ingredients

- 2 tablespoons Spice 99
- 1/2 cup lemon juice
- 2 tablespoons tamarind pulp
- 1 teaspoon salt
- 2 15oz cans of chickpeas
- 2 tomatoes
- 2 onions
- 1 bunch cilantro
- 2 potatoes
- 750ml chilled water
- Semolina Crackers
- 250ml ice (approximate)
- Mint leaves (Optional)
Directions

- Fill a medium sized pot with enough water to submerge potatoes. Lightly salt water and bring to a boil. Once boiling add potatoes and set a timer for 20 minutes. Check potatoes when the timer expires and removed once they are fork tender . Note* This may take longer for larger potatoes but they will be done once fork tender.
- In a large bowl combine 2 tablespoons of Spice 99, 1/2 cup of lemon juice, 2 tablespoons of tamarind pulp, 1 teaspoon of salt.
- Remove potatoes when timer is up or when fork tender. Medium dice boiled potatoes, onions and tomatoes. Wash and roughly chop cilantro. Open cans and rinse chickpeas. Combine these ingredients in the bowl from step 2.
- Fill a jug a with ice. Add chilled water and 2 tablespoons of Spice 99, 2 tablespoons of tamarind pulp, 1/2 cup of lemon juice, 1 teaspoon of salt, a tablespoon of mint leaves crushed into a paste (optional). Give it a mix until salt is dissolved. Check for taste and add more Spice 99 as desired
- Using your thumb or finger, crack open the top of your semolina cracker. Be sure not to puncture both sides, just one of them. Fill the semolina cracker with the Chickpea salad and then your seasoned water. Eat it in one bite for an explosion of flavor. Repeat until satisfied.

- 750ml of chilled water
- Some Ice (you want around 1 liter water in total and during mixing the ice will melt)
- 2 tablespoons of Spice 99 (or to taste)
- 2 tablespoons of tamarind pulp
- 1/2 cup of lemon juice
- 1 teaspoon of salt
- 1 tablespoon of crushed mint leaves (optional)
Directions

- Add all ingredients and give it a mix. Add Spice 99 to taste.

Papdi Chaat

- 2 Tablespoons Spice 99
- 1/2 Cup Lemon Juice
- 2 Tablespoons Tamarind Pulp
- 1 Teaspoon Salt

- 1 Bunch Cilantro
- 2 Potatoes
- 1 cup yogurt Puree
- Papdi crackers
- Mint optional
- 3 Tablespoons Sweet tamarind chutney

- Fill a medium sized pot with enough water to submerge potatoes. Lightly salt with a 1/2 tablespoon salt and bring to a boil. Once boiling add potatoes and set a timer for 15 minutes. Potatoes will be done when fork tender.
- In a large bowl combine 2 tablespoons of Spice 99, 1/2 cup of lemon juice, 2 tablespoons of tamarind pulp, 1 tablespoon of salt.
- Remove potatoes when timer is up or when fork tender. Medium dice boiled potatoes, onions and tomatoes. Wash and roughly chop cilantro. Open cans and rinse chickpeas. Combine these ingredients in the bowl from step 2.
- Garnish with papdi crackers, yogurt puree and cilantro and sweet chutney. A classic elevated.

- Spice 99 (to taste)
- 2 tablespoons melted butter (optional)
Directions

1. Microwave your bag of popcorn
2. Grab a large bowl, add popped corn and sprinkle Spice 99 to taste
3. Top it off with melted butter (optional)

Masala Mangos
Ingredients

- 1-2 Ataulfo or Champagne mangoes
- Spice 99 (to taste)

- Peel and dice mangoes into 1 inch cubes
- Add to a small bowl and season with Spice 99 to taste

Masala Fries
Ingredients

- 1-2 Russet Potatoes (or your favorite bag of frozen fries and skip to step 6)
- Spice 99 to taste
Directions

- Heat deep frying oil in a medium sized pot or wok to 375 degrees F
- Wash and cut Potatoes into 1 inch cubes.
- In a bowl, rinse cubed potatoes until excess starch is removed. Drain and dry with a paper towel
- Add your cut and dry potatoes to oil, be sure not to overcrowd
- Cook for 10 minutes or until golden brown
- Remove fries from oil, be sure to drain excess oil and add to a large bowl. Toss and season with Spice 99 to taste
